Small Sauces: Mushroom

Sauté 4 oz (120 g) sliced mushrooms in 1 oz (30 g) butter, adding 1 tbsp (15 mL) lemon juice to keep them white. Add to suprême, allemande, or white wine sauce or to appropriate velouté.
