Identification: Cylindrical root of an aquatic flowering plant, about 6–8 inches (15–20 cm) long, with light reddish‐brown skin. Crosswise slices show a circular pattern of holes. Slightly crunchy flesh.
Evaluation: Skin should be fairly smooth, with no soft spots or spoilage.
Preparation: Peel. Cut as desired.
