  • Identification: A kind of wild leek, ramps have broad, flat leaves and small, slightly bulbous root ends that have a pungent, garlicky flavor. Generally available only in the spring.
  • Evaluation: Leaves should be fresh and green, and white root should be firm, not shriveled. Ramp bulbs are small, typically only about 1/14 oz (2 g).
  • Preparation: Cut off fibrous roots. Leaves and stems are generally not eaten and so are usually cut off, but they may be left on for appearance, depending on the plating presentation.
