Type: Fat. Anadromous
Varieties: White sturgeon is found along the Pacific Coast of North America and is also farm-raised. Atlantic sturgeon is found along the East Coast of North America. Sturgeon is also the source of the most prized caviar.
Characteristics: Firm, meaty, oily flesh. Mild flavor.
Weight: White sturgeon: 10 to 15 lb (4.5 to 6.8 kg). Atlantic sturgeon: 60 to 80 lb (27 to 36 kg).
