- Varieties: Yellow perch is the most common. Walleyed pike, or walleye, is actually a perch, not a pike. Zander (French: sandre) is a popular European perch sometimes mislabeled in North America as European walleye, although it is different from, and usually less expensive than, true walleye.
- Characteristics: Mild-flavored, flaky white flesh with firm texture and fine grain.
- Weight: ½ to 5 lb (0.23 to 2.3 kg).
