Type: Fat.
Characteristics: A Southeast Asian fish related to catfish. Milder and sweeter in taste and more delicate in texture than North American river catfish. It is also called iridescent shark, but it is not a shark.
Weight: Large adults can weigh as much as 95 lb (43 kg), but swai is usually sold as frozen fillets weighing 3 to 11 oz (90 to 310 g) each.
