Batata Dulce, sweet potato (Ipomoea batatas)

Not to be confused with the Louisiana yam. The flesh of the tropical sweet potato changes in color from white through yellow to deep orange. A valuable source of vitamins A and C, as well as thiamine and riboflavin.
