This seasoning gives a characteristic and distinctive Caribbean flavor to chicken.

Dressed-weight chicken means chicken plucked, singed and drawn, with head, neck and feet removed.

The first horizontal line indicates the dressed-weight of chicken in pounds, either whole or in pieces. The vertical lines under each weight indicate the adequate seasoning.

To prepare seasoning — Crush and mix in a mortar:

Peppercorns (whole black peppers), peeled cloves garlic, whole dried orégano and salt. Add olive oil and vinegar or lime juice and mix well. Rub chicken with this seasoning. Dressed-weight chicken, in pounds
