Take any discarded cores or peels and cook down in a Simple Syrup until golden brown. Strain the skins and cores and then reduce until the texture is about halfway between maple syrup and molasses. Use as a drizzle on yogurt, with a spritz of seltzer for a drink, or warmed and spooned over a slice of apple pie or galette.
