Thin the apricot jam 50:50 with water (¼ cup [60 ml] of jam with ¼ cup [60 ml] of water) and then brush over fresh fruit tarts for a shine. Thin with buttermilk to glaze doughnuts, or brush a bit over roast chicken just as it finishes cooking for a deep amber hue.
