Dried cherries are truly one of my favorite ingredients. I almost always buy dried tart cherries, but watch out because they often come sweetened, which doesn’t make much sense to me. I use them just about anywhere I would raisins. Dried cherries also pickle well using the Basic Fruit Pickle Brine, but only pickle them for the flavor because there’s no reason to preserve an already preserved product.
