The most traditional way to preserve grapes is to dry them into raisins. Sadly, our September sun does not have the same drying quality as in southern Italy, so drying outside or on rooftops is pretty much out. Thankfully, laying them out on the racks of a dehydrator or a 200°F [95°C] oven works well too. Like all home-dried fruit, if you don’t remove a critical mass of moisture, mold can grow, so I still store my dried fruits in the fridge or freezer to be safe.
