Pickled pears add a nice tang of acidity to normally rich fall and winter foods. Make the Basic Fruit Pickle Brine using apple cider vinegar and pour over sliced or diced pears. I usually leave the skins on to maintain the integrity of the pear. I find it best to use slightly underripe pears for pickles. Thankfully those aren’t hard to find.
