Prunes get a bad rap, probably because most people think of them as a way for those of us of a certain age to get enough fiber, ensuring regularity. If you haven’t eaten prunes in a while, give them a try, but just a couple. I think you’ll be delighted. When I dry my own, I leave the pits in until the fruit is leathery and then pop the pits out.
  • Cognac-soaked prunes are a perfect and elegant use of the fruit: Soak 1 cup [180 g] of prunes in ½ cup [120 ml] of cognac for an hour or so and then use to garnish panna cotta, ice cream, or something else creamy.
  • Stuff prunes with walnuts and serve alongside blue cheese.
