Pickling ripe berries tends to yield very mushy results, though pouring a Basic Fruit Pickle Brine over frozen fruit helps some. Recently, there has been a lot of to-do about pickling green strawberries. The unripe fruit is tarter, having not yet developed its sugars, and the flesh is firm enough to withstand the acidic brine. These pickled berries taste more vegetal to me, so I use them in places where I’m craving more of a traditional pickle than the sweet-sour combination of other pickled fruits.
