I believe in kitchen scales and weighing ingredients. We use scales in restaurant kitchens because they provide more precise measurements and make it much easier to scale a recipe to make one pie or ten. If you don’t own a kitchen scale, please consider buying one. My favorite is the OXO Good Grips Five-Pound Food Scale with Pull-Out Display. I’ve had mine for years. It is accurate, doesn’t burn through batteries, costs around $30, and hasn’t broken yet.
