Sea Salt

Like kosher salt, sea salt comes in a variety of textures and flavor profiles. I tend to use the very fine sea salt where I would kosher, and the chunky crunchier sea salts, like Maldon, to finish a dish where you want a big pop of salinity to cut through rich or sweet flavors.
