Water that has some sort of an acid in it, used to keep things like fennel or artichokes from oxidizing. To make, add 2 Tbsp of vinegar (usually apple cider or white wine; avoid dark vinegars such as balsamic or sherry) to 2 cups [480 ml] of cool water. You can also use lemon juice or white wine, but I always have vinegar on hand, and it is the cheapest of the options.
