Pulp: A Practical Guide to Cooking with Fruit

Published 2023

  • About
A circular paper lid placed over a stewing pot of fruit to allow some slow evaporation. To make, fold a piece of parchment in half and then in half again to make a square. Then fold in halves to make a triangle. Place the folded tip end of the triangle at the center of the pot and then trim the loose edges of the parchment to the width of the pot. Unfold and press into the pot in direct contact with the cooking fruit. You can also just use a stray butter wrapper and not worry about the exact shape.
