The growing point of edible palms, consisting of the larger basal stem, growing shoot or heart and the new emerging leaves. Many palms produce an edible heart. In Australia they are very rare, with only a handful of restaurants being able to buy them from a supplier in North Queensland. The base portion can be used similarly to bamboo shoots without the need for pre-boiling. All portions are delicious raw, marinated, steamed or stir-fried. Each section has a different texture and appearance and can be used for different culinary sensations.
