Pearl Oyster Meat

The flesh of the Pinctada maxima pearl oyster, which is almost as prized as the South Sea pearls it produces. Very small quantities are harvested annually and most goes directly to restaurants. Pearl meat is usually purchased snap frozen, as it is harvested a long way offshore. Available from specialist fishmongers.
