The Irish eat a lot of pork and a lot of lamb. We have good grass-fed beef, but it’s not our number one meat the way it is in the United States. While a good grilled steak is always appreciated, beef is more typically seen in hearty stews such as Beef and Guinness, or savory pies, like the perennially popular Steak and Kidney (frequently called Snake and Pygmy). We eat far more lamb than Americans do, lamb chops and roast legs, ground lamb and lamb kidneys. Australian and New Zealand lamb is widely available in US markets, but I’ve been finding that homegrown American lamb often tastes much better (less shipping?) and is less expensive.
