Ligurians grow beautiful fresh tomatoes in their gardens, and are among the leading producers of sun-dried tomatoes (pomodori secchi). These were not intended to be a faddish ingredient, as they are in the rest of the world, but were devised as a means of preservation for when tomatoes are out of season. There is a recipe. You may also pound sun-dried tomatoes to make a very potent sauce.
