Vongole are small clams found on the coast of Italy from Genoa down to Naples. They are oval in shape and very sweet. Spaghetti alle Vongole is found in every restaurant along that coast. In the River Cafe we use small round clams fished off the coasts of Brittany and Ireland which are equally delicious. It is necessary to soak them in changes of water for some time to remove the sand and grit.
