Mint is known as the herb of Rome, and is traditionally part of the stuffing for artichokes in Carciofi alla Romana. True wild mint – nepitella or mentuccia – is difficult to find in Britain, but it grows everywhere in Italy. We use young tender mint leaves in dishes of fresh and wild mushrooms, in salads, and scattered over deep-fried zucchini. Mint is an essential ingredient of Salsa Verde.
