Sage is a pungent herb often cooked with calves’ liver. We always put sage leaves into the cooking water of borlotti or cannellini beans. Fresh sage leaf ‘sandwiches’, with a salted anchovy in the middle, deep-fried, make a brilliant addition to Fritto Misto. Sage also flavours a butter for ravioli.
