The proper name for this winter vegetable is radicchio rosso di Treviso. It comes from an area in the north, around Venice and Treviso, and when cooked is not as bitter as its round relative, the more familiar red radicchio di Chioggia. The leaves are long and pointed and they grow in bunches.
