Ruffage: A Practical Guide to Vegetables

  • About
Thankfully, canned tuna is widely available and a great protein source.
I buy tuna packed in oil, not water, because it tastes better. The water dilutes the flavor of the meat; the oil improves it. Plus, you can use the oil in dressings and vinaigrettes, making use of more of the product. If you can’t find oil-packed, buy the water-packed, but ask your grocer to see if they can order oil-packed for you.
As is true of so many things, the better the quality, the more expensive the product. If you have access to an American-caught-and-packed tuna or line-caught tuna, it will be more expensive but worth it, if you have the funds.
