Small pickled cucumbers often served with charcuterie. Their high level of acidity makes them suitable for sharpening the flavour of mayonnaise-based sauces such as tartare sauce. Cornichons are particularly useful in balancing flavours in salads containing richly flavoured ingredients and may even play the role of vinegar to refresh the palate structure of a dish.
