Also called fleurettes, meaning ‘little flowers’ in French. Pertains to the tiny individual heads cut from cauliflower and broccoli heads. They are delicious to eat raw in a salad, particularly as an ingredient in a vegetable salad dressed with a Thai dressing consisting of garlic, chilli, sugar, fish sauce and lime juice. The dressing should taste spicy, hot, sweet and sour. Plunge into boiling salted water for a minute or two, then refresh under cold running water if called for in a European recipe.
