Very few prepared horseradish products can compare with the freshly grated root. Grating by hand will result in tears but for those who have a fruit juice extractor, the process is quick and avoids the tears. Simply peel away the skin and pass the roots through the machine, collecting the juice in a small jug. Combine the grated flesh and juice, then season with salt and a touch of lemon juice to arrest discoloration. Press the contents into a small jar, cover the top with a thin layer of vegetable oil, then refrigerate.
