Mandoline

This is among the most useful and time-saving pieces of cooking equipment. A mandoline is invaluable for making onion rings and slicing most hard root vegetables, including fennel bulbs. Always use the hand-held guard and position the bottom of the device on a folded damp cloth for stability. Be especially vigilant when slicing hard vegetables like celeriac - excessive pressure should not be necessary and may cause the mandoline to move, possibly resulting in a nasty cut to your hand.
