This is a Spanish specialty product that has a complex, slightly sweet character and gentle spiciness. It marries well with squid in particular and adds complexity to a vinaigrette. It should be ever so lightly toasted in a dry pan over low heat for 10 seconds or so until aromatic if used in a dressing or for dusting over a salad. [See also Suppliers.]
