The word vierge means ‘virgin’ or ‘pure’ in French. This very useful sauce is based on extra virgin olive oil with the addition of peeled, seeded and diced tomato and fresh herbs such as tarragon, chervil and chives, seasoned with salt and freshly ground pepper.
