I find thermometers invaluable in certain recipes for maintaining consistency and food safety. A simple candy thermometer is useful to gauge the temperature of oil used for deep-frying and for controlling the temperature of a poaching liquid. β€˜Probe’ thermometers help the cook to achieve the perfect result when roasting meat. Food thermometers are available from specialist cookware shops.
