Snow Pea Shoots

Green pea, sugar snap and snow pea shoots add freshness and texture to a bowl of salad leaves. They are great in a chicken and mayonnaise sandwich or a beetroot and fresh goat’s cheese salad. Sauté snow pea shoots over high heat in very little vegetable oil, then add to a bunch of sliced red radishes and toasted sesame seeds or toasted slivered almonds for a delicious warm salad.
