Gratin dishes are among the most frequently used items in my kitchen, both the porcelain kind and the oval, red-glazed earthenware dishes called tians. Food cooks well and always looks beautiful in them. I use them for both savory vegetable dishes and fruit desserts. They have a homey, comfortable look and are always a pleasure to bring to the table.

A large oval dish, 14 by 10 inches, will hold eight to ten servings; a smaller one, about 8 by 10 inches, will accommodate four servings, and for crowds, use a large round glazed dish about 12 inches across.
