Spring-loaded kitchen tongs are wonderfully useful. Like an extension of your hand, they can be used just as skillfully to pick things up, turn them over and around, and even reach for things in high places. An 11-inch pair is easiest to handle in the kitchen, but a 14-inch pair is ideal for charcoal grilling, especially if you like to cook over a large grill; the tongs allow you to work out of the direct range of smoke and intense heat. Tongs can be found in restaurant supply houses.
