This tofu has a soft, silky texture, like flan. It is fragile and best used cut into cubes and included in a salad or served with a sauce. It is now sold in vacuum-packed boxes. The shelf life is long, and the need to pack the tofu in water is eliminated, making it possible to use the tofu right from the box without having to drain it and press out the water first.
