This is a wonderful way to treat tender vegetables, especially those from the garden. Choose a variety—green beans, little potatoes, different kinds of summer squash, quartered peppers, new carrots, or tiny garlic cloves. Set them on a piece of heavy foil, include a few branches of herbs if you have them, and salt them lightly. Wrap up the foil and set the package right on the coals for about 20 minutes. The moisture in the vegetables will make enough steam to cook them. Unwrap the package, inhale the steam, and serve. Butter isn’t even necessary.
