Kumquats in Syrup

If you prefer, rather than letting the kumquats dry, pack them in a clean jar in their syrup and store them in the refrigerator. They should keep indefinitely. They can be used in fruit compotes, either whole, if they are small, or sliced. Or work them into sweet breads, like the stöllen, or slice them and serve them over ice cream or stir them into rice puddings.
