Killing a lobster

Place the lobster in the freezer for about 2 hours to desensitize it.

Hold the lobster tail down under a heavy cloth. Using a large sharp knife, place the point in the centre of the head and quickly pierce right through to the board, cutting down and forward between the eyes.
