kamaboko Available in Japanese and Korean shops, this firm processed-fish product is precooked and ready to eat. It is usually shaped like a long flattened mound and comes on a piece of wood. It may be golden to white, or it may be colored pink or bright green with food coloring. To use, first cut it into thin slices and then run a knife between the kamaboko and the board it comes on to detach the slices. Serve arranged attractively on a small plate, as an accompaniment to rice or sushi, or use as an ingredient in sushi rolls (see Roll-Your-Own Sushi, and Classic Sushi Roll-ups).
