mirin Mirin is Japanese cooking wine, sweet-tasting and a staple in the Japanese pantry. Mirin, which contains 14 percent alcohol, is used for flavoring many dishes, often briefly cooked first to boil off the alcohol. It is available in Japanese and Korean groceries and in specialty stores. It keeps indefinitely. You can substitute sake sweetened with sugar.
