olive oil Widely used in Mediterranean cooking, olive oil comes in many qualities and is produced in many places. Try to use oil from the country or region whose dish you are preparing: For example, use Italian extra-virgin oil for Italian dishes (or even more precisely, use a regionally produced oil for dishes from a particular region) and Spanish olive oil for paella and other Spanish dishes.
