oyster sauce A Chinese condiment and flavoring ingredient made originally from oysters, oyster sauce these days is largely made of artificial flavors, often with too much caramel flavoring. Good oyster sauce is dark colored and ideal as a light flavoring for plain cooked greens. Lee Kum Kee brand has a fuller flavor than many; experiment to find one you like.
