pickled ginger Available in Japanese and Korean grocery stores, this beautiful pinkish condiment of finely sliced salted ginger is usually sold in clear plastic containers. Once opened, it should be stored, well sealed, in the refrigerator, where it will keep for several months. You can also make your own (see Pickled Ginger). Serve it to accompany sushi or other flavored rice dishes.
