wild lime leaves Also known as kaffir lime leaves, these citrus-scented leaves (bai makrut in Thai) are available both fresh and dried in Southeast Asian groceries. They are dark green, shiny, double-lobed, and wonderfully aromatic; even through a well-sealed plastic bag, you’ll be able to smell their citrus-lime aroma. Like bay leaves, they are used for flavoring and are not eaten. Dried lime leaves keep indefinitely and are a useful substitute when fresh leaves are unavailable. Store fresh leaves in the refrigerator, where they will keep for no more than a week. For longer-term storage, wrap them in plastic and freeze them. See also limes.
