green tea The preferred tea in Japan and in much of China, green tea has been dried and cured but not fermented. Green tea has just as much caffeine as black tea. The most tender young leaves, picked in spring, are used to make the powdered bright green tea used in Japanese tea ceremonies. (Whole books have been written on tea traditions in China and Japan.)
