fresh tofu Fresh tofu comes in two basic textures: firm and silky. Firm tofu, the Chinese-style, is more widely available. It can be easily cut into cubes and even gently stir-fried without breaking up. Silky tofu, used in some Japanese dishes and available mainly from Japanese grocery stores, is softer-textured and slippery.
